[Chicken and Turkey] Mexican Casserole with Tortilla Chips

This is a family favorite, adapted from Saving Dinner the Low-Carb Way by Leanne Ely. Quick and Easy!
  • 1 lb ground turkey
  • 1 package taco seasoning (or equivalent spices)
  • 1 can black beans
  • 1/2 c chopped green onion
  • 3/4 c salsa
  • 1 c shredded Cheddar cheese
  • 1/4 c chopped black olives
  • sour cream
Brown turkey and add taco seasoning. Mix in black beans. Spread mixture in an 8-inch square pan and top it with green onions, salsa and cheese. Bake at 375 for 10 to 15 minutes.

Serve with chopped up black olives and sour cream, a big green salad and your favorite tortilla chips. (Or make your own chips out of whole wheat tortillas.)

[Breakfast] Oatmeal Pancakes

Here's a great pancake recipe I got from Jill in NJ over at wtmboards.com

Combine and let sit overnight
  • 2 c. oatmeal
  • 1 2/3 cup yogurt
  • 1/3 c milk
In the morning add to oatmeal mixture
  • 2 eggs

Combine dry ingredients and add to oatmeal mixture
  • 1/2 c ww flour
  • 1 t baking powder
  • 1 t baking soda
  • 1 t cinnamon
  • 1/4 t salt
  • applesauce to sweeten (optional) <---I haven't tried this yet

Preheat griddle-important, spray with nonstick spray, use 1/3 cup per pancake.

My notes:
  1. We have to add a lot of water to this mixture to get the consistancy we need.
  2. Next time, I think I'll put the oatmeal mixture in the blender to see if that helps the consistency.
  3. The kids like them.

Welcome

I started this blog so that I can share healthy recipes with my family and friends. My definition of healthy is: no "Great White Hazzards" (white sugar, white flour, white rice, white potatoes), healthy oils, whole grains, and lots of veggies. I'll (ususally) post only those recipes that we have tried and enjoyed. I'll also let you know if they are kid-friendly or company worthy. Just be warned--my kids will eat almost anything!
