I am a holistic mom because: I believe everyone is a Holistic Mom (Person) at heart. Everyone is Holistic in their own way, the key is being accepting of where another is on their own Holistic Journey.
My holistic passions are: Earth Based Celebration, Spirituality, Organic Eating, Nature Based Education
What inspires you about HMN or holistic living? I love this group of people. I have found some true Soul Sisters. This chapter is my tribe. I have had some amazing conversations: spiritual, intellectual, and emotional. I love having an amazing group of friends to share my Holistic Journey with.
One of my favorite healthy recipes: Honestly, I love the Holistic Moms Cookbook: Many Paths, One Journey to Health. My favorite section is the From Farm to Table that suggestions recipes based on the season. One of my favorite recipes is: Black Bean and Sweet Potato Stew pg. 43
Ingredients: 2 T oil 1 med. onion, chopped 1 med. carrot, minced 1 rib celery, minced 4 med. sweet potatoes peeled and cut into 1/2 inch cubes 1 clove garlic, minced 1 (28 oz.) can whole peeled tomatoes, chopped with can juice reserved 1/2 cup chicken or vegetable stock 2 tsp. ground cumin Salt and pepper, to taste 1 (15 oz.) can black beans with juice from can Optional: 1 bunch chopped cilantro
Directions: 1. In a large pot or Dutch oven, heat the oil and sauté the onion, carrot and celery over medium-high heat, until soft, about 5 minutes. 2. Add the sweet potatoes and site for another 5 minutes. 3. Add the garlic, tomatoes and juice, cover and turn the heat down to medium. Cook for 15 minutes or until potatoes start to soften. 4. Add stock, cumin, salt, pepper and black beans with the juice from the can, turn the heat down to low and cook uncovered, until sweet potatoes are tender, about 10 minutes. 5.
