Member Highlight
Nichole Okapal
How long have you been a member of HMN?
I have been a member for about 6 months. Hoping to get more involved throughout the year!

I am a holistic mom because:
I am a holistic mom because: Our health and happiness starts from the inside and I want to live a long, healthy, happy life with my family. I took an interest in my own health when I became a certified yoga instructor. Being in a community where people were open to holistic living allowed me to continue my journey and opened my eyes to the endless possibilities. I soon saw a Natural-path and stopped taking a medication I had been on for 5 years! After I became pregnant I set out on the path to have a natural water birth. I wanted to bring my son into the world as comfortable as I possibly could for him and myself. I focused on building his immune system and fueling is adorable little body with all things healthy. I have continued to empower myself and my family through connecting with like minded people. Knowledge is power and the more we learn from each other, make informed decisions on our health and our families health and stand up for what we believe, the happier and healthier we all will be!

My holistic passions are:
My holistic passions are prenatal yoga, natural birth, organic gardening, baby-wearing, nursing, being in nature & essential oils!

What inspires you about HMN or holistic living?
Holistic living inspires me because I love being connected with like minded people. I am so inspired by all the mamas who take control of their health health and their families health through holistic living. Being in a community where we build one another up and support each other is the best!

Our favorite "Fall" recipe!

Butternut Squash (from our garden) Soup!
  • 1 large butternut squash, peeled and diced
  • 3 carrots, diced
  • 2 to 2-1/2 cups stock (chicken, turkey or veggie...organic and low sodium if possible or make your own)
  • ½ cup full fat coconut milk (can, not carton), optional
  • ½ tbsp cinnamon
  • ⅛ tsp ground sage
  • ⅛ tsp nutmeg
  • Sea salt and pepper, to taste

Pre-heat the oven to 375F. Line a baking sheet with aluminum foil or parchment paper.

Put squash and carrots onto baking sheet. Drizzle with the oil and sprinkle with sea salt. Roast for about 30-45 minutes on until soft and caramelized. (Honestly, this baking time depends on your oven).

Remove and allow to cool. If you have a blender or Vitamix, you can probably do the next step in one batch. If using a food pro, you may have to do multiple smaller batches.

Place roasted veggies, stock, coconut milk (optional), cinnamon, sage, nutmeg and a little cracked pepper into the Vitamix/blender. Process for 3-4 minutes, adjusting the amount of stock if necessary to thin the soup out a bit. The result should be a smooth consistency.
