How long have you been a member of HMN? I think it's been 5 years. I'm a Holistic Mom because: Well, initially it was because all of these holistic things were cheaper! Growing my food, breastfeeding, cloth diapering, etc. Much of it was initially about saving money. But I quickly realized how much healthier these things were for my family (and for the earth)--which fueled my passion to learn more.
My holistic passions are: FOOD!!! (including breastmilk) I think that's the biggest. How to grow it, how to eat it, what it does for us and to us... I love it all. But it is closely followed by nurturing the child--which is more than attachment parenting What inspires me about Holistic Moms or holistic living? When I look at what living more holistically has done for my son, that's really all the inspiration I need in life. As an infant, he was believed to have cerebral palsy and be profoundly deaf. He didn't know we were in the room with him until he was 2. How we ate, how we parented, how we lived--all of it changed how my son grew and developed in the most remarkable ways. He just turned 8 and the specialists that saw him long ago are in awe. And the support of HMN--knowing we weren't the only family believed to be "crazy" for what we found to work--it was the only support we had sometimes.  One of my favorite healthy recipes: My "anything leafy and green" recipe--whether you can identify it or not. ;) (and bok choi/pak choi for that matter) But collards, kale, chard, spinach... if it's dark green and leafy, this covers it.
I take ANY dark leafy green veggie (recognizable or not) and remove the stems. Methods for this vary. Some people just rip the stem out, but I fold the leaf in half and just run a knife alongside the stem--cutting it out. The stems are often the heart of the bitterness in greens (although some greens have plenty of bitterness or zestiness even without the stems) Wash, drain it out (salad spinners are ideal--you want them pretty dry, so blot if you don't have a spinner) and cut it up into bite sizes. Get a pot with a lid and cover the bottom with extra virgin olive oil--maybe 1/4" in the bottom--and heat it. Add some minced garlic (or chopped--whatever) and if you have them, pine nuts or some chopped walnuts. When the garlic is sizzling, add your leafy greens and make sure to turn it enough that it's all coated with the oil/garlic(/nut) mixture. I use tongs to make sure that all the pieces get coated and then let it cook covered for 1-2 minutes, turn/toss it and let it cook covered for another 1-2 minutes. Then serve.
