  "What am I supposed to eat?"
Tuesday, May 7, 7 - 9 pm  
In today's world of so many choices, too much information and the social media vehicles that deliver it right to our phones, it can be difficult to determine what is the "right" decision when it comes to food. We are constantly bombarded by information telling us the right way to eat: gluten-free, vegan, paleo, raw, etc. And just when we think we've found the right eating style, there is new information that tells us we should change again. So how do we know what to eat? Join us for a lively discussion as we navigate the myriad of eating style choices and ground ourselves in the basic knowledge of good food choices that work best for our families."

How long have you been a member of HMN?  
I joined shortly after we moved here from Colorado in December 2011.
 
I am a holistic mom because: As a mom, keeping my kids healthy and safe is my number one priority. Living a holistic and natural lifestyle helps me achieve those goals. I made the decision to parent this way long before my first child was born and the benefits I've seen have been remarkable. 
 
Your holistic passions are:
Holistic nutrition, alternative medicine and natural health.

What inspires you about HMN or holistic living?
I can see the proof of it's benefits right in front of me. My girls are 4.5 and 2.5 and neither has ever had an ear infection or a dose of antibiotics, they are active and thriving. I don't believe it's "luck," it is directly related to choosing to live a holistic life. I love seeing how the body can heal itself and how good nutrition directly impacts our life. Adopting a holistic lifestyle is very empowering, it reminds you that you can have some degree of control over your destiny.

One of my favorite healthy recipes:
I'm always trying to sneak more vegetables in our diet and these muffins are packed with nutrition and taste really good!

Ingredients
  • 1/2 cup all-purpose flour
  • 1/2 cup gluten-free, high protein flour (I like garbanzo bean flour.)
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • 6 dates, pitted.
  • 2 tablespoons coconut oil
  • ¼ cup yogurt
  • 1/2 cup almond milk
  • 1 teaspoon lemon zest
  • 2 medium-sized bananas
  • 1 cup packed baby spinach leaves
  • ¼ cup chopped walnuts or pecans
Directions
  1. Preheat oven to 180C (350F). Grease or line muffin tin with paper liners and keep ready. Mash the banana and set aside.
  2. In a large bowl, sift together the flour, baking powder, baking soda and salt.
  3. In a food processor, blend the spinach leaves until very finely chopped. It will almost look like a pesto, and that's what we need. Add in the dates, oil, yogurt, milk, lemon zest and mashed banana.
  4. Coarse grind the pecans in another grinder, or just pound them with a mortar-pestle; you can even just chop them lightly if you like texture.
  5. Fold in the spinach/yogurt blend and half of the pecans into the batter, leaving some of the nuts aside to sprinkle on the top. Fill batter into prepared muffin tin, filling hem upto the brim.
  6. Garnish each muffin with the remaining pecans. Bake for 20-25 minutes or until toothpick inserted in the center comes out clean.

Chapter Meetings: Held the 1st Tuesday of every month from 7-9 pm at The Health Doctors, 28379 Davis parkway, Warrenville, www.thehealthdocs.com Open to the public.
Morning Meetup & Open Discussion: Join us at Whole Foods Naperville for a morning open discussion meeting the 2nd WEDNESDAY of each month from 9:30-11 am. http://wholefoodsmarket.com/storesbeta/naperville/ Open to the public.
Playgroups: We meet regularly for play dates at members homes. Locations will vary. Membership is required to attend playgroups.
Moms Night Out:We gather the 3rd Friday of each month for a moms only "playdate". Babies in arms are welcome. Activities and locations vary. Membership is required to attend mom's night out.
Book Club:We meet several times a year to discuss the chosen book. Location will vary. Membership is required to participate in book club.
Mom & Tot Outings: Special outings planned several times a year specifically with our young ones in mind. membership is required to participate.
Family Gatherings, Movie Nights, and additional members events will continue to be scheduled.
