Monthly Chapter Meeting
HOLIDAY SOCIAL!
Tuesday, December 3rd, 7pm

We hope you can join us for a fun night to celebrate the holidays together!   Our December meeting / Holiday Social this year will be held at Two Brothers Roundhouse in Aurora.  Two Brothers has many organic items on the menu, gluten-free beer, and gets things local when possible.

We will be doing a gift exchange again this year, so please bring your favorite holistic product ($10) wrapped to exchange!

We will also be taking this opportunity to bid farewell to Lisa Rooney, who will be moving out of state soon.  We are all forever indebted to Lisa for founding this chapter and bringing us all together, and are so thankful to be able to spend this evening with her before she leaves.

This event is open to others interested in HMN, so feel free to pass the evite along.  Nursing babes are always welcome.

*WE WILL ALSO BE COLLECTING ITEMS FOR ILLINOIS TORNADO VICTIMS, SO PLEASE FEEL FREE TO BRING ANY DONATIONS TO THE SOCIAL*

A Big Thank you to...
Genis Schmidt!
We'd like to thank Genis for 2 years of amazing leadership service. She has spear-headed leadership meetings, kept us on task, organized many a chapter meetings, and put together our first ever Holistic Expo (which was a huge success) after having baby #2 and moving!  On top of that, she has been instrumental in helping to start a new HMN Chapter!  She is above all, a loving wife, mother, and friend who has brought so much to our chapter but alas, needs now to take care of herself and family. Thank you for stepping up when the chapter needed you most, for helping to keep our chapter strong and for promising to continue to stay involved! We will miss YOUR beautiful light but wish you much luck with your holistic journey.

With lots of love,

Abigael Kuzmanich & Sarah Bruckner
I am a holistic minded because:

Abigael:  My approach to life doesn't focus on one aspect alone.  I incorporate my mind and my body into one.  When I eat, I make sure that the food I'm consuming will provide energy while also being healthy.

Sarah:  I am conscious about my health. I only have this one life and this one body, and I want to keep myself in the best condition possible.

Your holistic passions are:

Sarah:  Midwifery.  My dream is to become a nurse-midwife.

What inspires you about HMN or holistic living?

Abigael:  What inspires me is that you aren't putting anything unnecessary into your body, and everything is natural.

Sarah:  I am so inspired by the fact that each person is so knowledgeable and involved in his or her wellness. People care enough to go against the grain and question the norm in order to do what's best for themselves and their families.

One of my favorite healthy recipes:

Abigael:  Slow-Cooked Organic Beef Shanks with Mushrooms and Onions which I found on the Whole Lifestyle Nutrition website.

Ingredients

  • 1lb grass-fed beef shanks (3 small or 2 medium shanks)
  • 2Tbs coconut oil
  • salt and pepper
  • 6 cloves garlic, roughly chopped
  • 2 onions, roughly chopped
  • 2 cups dry red wine
  • 3 1/2 cups organic or homemade beef broth
  • 2Tbs balsamic vinaigrette
  • 10oz white or Baby Bella mushrooms, quartered

Instructions

  1. Heat coconut oil in iron skillet over medium-high heat
  2. Generously rub beef shanks in sea salt and black pepper
  3. Sear shanks in skillet, 7 minutes each side
  4. Remove shanks, set aside, and lower heat to medium
  5. Add garlic and onions, season with salt and pepper, cook for 15-20 minutes, stirring occasionally, until they begin to brown
  6. Add 1 1/2 cups red wine, and 1 1/2 cups beef broth, season with salt and pepper
  7. Bring to a boil, lower heat to low simmer, stir in 1Tbs balsamic vinaigrette
  8. Return shanks to pan, simmer low, uncovered, for 3 hours (until most of the liquid is reduced)
  9. After 3 hours, add remaining red wine, beef broth, and balsamic vinaigrette; season with salt and pepper
  10. Bring to a boil, then reduce to a low simmer, partly covered, for 4 hours
  11. After 4 hours, gently push on the meat to remove it from the bones
  12. With the back of your wooden spoon, poke the buttery marrow out of the bones into the stew, stir to incorporate
  13. Stir in the mushrooms, cover and simmer for 1 more hour
  14. Serve over creamy polenta, brown rice, or couscous

Sarah:  Lemon Oregano Chicken

(Measurements are approximate - adjust according to your preferences)
1 pound chicken breasts
1 tbsp Trader Joe's Lemon Pepper Seasoning
1 tbsp dried oregano
½ stick butter, melted
½ cup lemon juice

Preheat oven to 350 degrees. Place chicken breasts on greased pan (using aluminum foil makes for an easier cleanup!). Pour melted butter and then lemon juice over chicken breasts, making sure to coat each piece. Sprinkle lemon pepper seasoning and then oregano over chicken breasts. Bake for 45 minutes, or until chicken is fully cooked. Serve over brown rice or quinoa.
